I have never used Pinterest for marketing, but usually the way things go with this is when something is new and hot many people create courses on it, and then when it's no longer new you will not see as much. A lot of the old content may very well be still applicable, the platform probably does not change that drastically.

Pinterest used to rank very well in google for hashtags and keywords added to posts.  I remember years ago buying a software which automatically posted day in day out and I never made one sale.  Mind you I was a very young spammy internet user back then, lol
